5 Vegetables to Improve the Body's Insulin Response

Verywell Health published a report reviewing recommendations from nutrition experts regarding specific vegetables that may help improve the body’s insulin response. Insulin is the hormone responsible for transporting glucose from the bloodstream into cells for use as energy. The report cited studies linking higher consumption of green leafy and cruciferous vegetables with a reduced risk of developing type 2 diabetes.
Matthew Landry, Assistant Professor at the University of California, Irvine’s School of Medicine’s Department of Population Health and Preventive Medicine, explained that chewing raw cruciferous vegetables releases phytochemicals such as sulforaphane. These compounds reduce cellular inflammation, decrease hepatic glucose production, support insulin-producing pancreatic cells, and activate adenosine monophosphate-activated protein kinase (AMPK), an enzyme that helps muscles absorb sugar and convert it into energy. He noted that research in this area is still evolving; one study found that broccoli sprout extract, rich in sulforaphane, slightly lowered fasting blood sugar in individuals with prediabetes, although the effect was less than targeted.
Madison Reader, Vice President of Clinical Operations at ModVie Health, stated that Brussels sprouts belong to the same cruciferous family and contain a mix of soluble and insoluble fiber, which helps slow the rise in blood sugar after meals. A study indicated that consuming approximately 300 grams daily of cruciferous vegetables—such as broccoli, cabbage, cauliflower, and Brussels sprouts—led to better blood sugar control over a 24-hour period compared to a similar amount of root and winter squash vegetables.
Curly kale and other dark leafy greens provide ample fiber with limited carbohydrates. Reader recommended cooking these vegetables specifically, as cooking reduces their volume, making it easier to consume a concentrated serving of fiber and nutrients. They are also rich in magnesium, a mineral linked to insulin signaling and glucose metabolism. A large-scale study revealed that individuals who consume higher amounts of green leafy vegetables have lower levels of fasting blood sugar and glycated hemoglobin (HbA1c) compared to those who consume less.
Regarding green peas and green soybeans (edamame), Reader clarified that while many avoid them due to their carbohydrate content, their high levels of soluble fiber and plant-based protein help stabilize blood sugar by slowing carbohydrate breakdown and their entry into the bloodstream. She highlighted that edamame is particularly rich in protein, making the combination of protein and fiber a factor that enhances satiety.
