Science Takes a Seat at the Table: France Turns Flavors into Experiences

What happens to food during cooking? And how is its taste linked to smell and memory? These are everyday questions that France opens its laboratories to the public to explore, as part of the “Science Festival,” whose activities continue until October 12.

This year’s edition, which launched last week, offers more than 7,000 participatory events, including experiments, laboratory visits, and meetings with researchers. The activities are free and open to all ages, with programs tailored for schoolchildren and families. The festival is patronized by French chef Thierry Marx, known for combining the art of cooking with science.

The food theme covers topics ranging from the chemistry of cooking and the creation of mixtures to the transformation of liquids into gels. It also addresses the mechanisms of taste, smell, appetite, and satiety, as well as the relationship between food and sensory memory.

Discussions extend to the environmental impact of food production and consumption, dietary habits, and table-related heritage, making food a gateway to understanding various scientific disciplines through experiments that resonate with daily life.

For children, a six-episode audio series titled “Science Sits at the Table: The Life and Fate of a Dandelion” has been launched. It follows the journey of a vegetable and its companions as they explore flavors, cooking, and digestion. The series is primarily aimed at children aged 9 to 12, with the goal of fostering curiosity and critical thinking through storytelling.
