Mayonnaise sparks debate among its fans and critics. While some view it as a distinctive addition to many dishes, others consider it an unhealthy choice due to its high fat and calorie content. Mayonnaise is one of the most widely used sauces globally, employed in preparing sandwiches, tuna, potato, and coleslaw salads, and added to many meals to impart a creamy texture and distinctive flavor.

Despite its simple ingredients—primarily oil, egg yolks, and vinegar, often with mustard—mayonnaise has acquired a negative reputation because of its high fat and calorie content, as well as the longstanding belief that egg yolks raise blood cholesterol levels.

But the question remains: Is mayonnaise truly harmful to health?

Sophie Medlin states that mayonnaise is often misunderstood, clarifying that it is not inherently unhealthy and that using small amounts can fit into a healthy diet. A tablespoon of regular mayonnaise, or about 15 grams, contains approximately 100 calories and 10 grams of fat, a higher proportion compared to some other condiments like mustard. However, high calorie content does not necessarily mean mayonnaise should be completely excluded from the diet.

One of its nutritional benefits lies in the type of fat it contains, as it is typically made with vegetable oils rich in unsaturated fats, which are associated with better heart health outcomes compared to saturated fats.

Additionally, the fats in mayonnaise help the body absorb fat-soluble vitamins, such as vitamins A, D, E, and K, which are naturally present in vegetables.
